With seating for 75 guests, Tre Fratelli Italian Restaurant is set to open Thursday, January 23, 2020 on the outskirts of Olive Hill at 9119 US 60, across from the entrance sign for Carter Caves State Resort Park.
Restaurant Operator Michelle Alsawafi said Tre Fratelli will be open seven days a week with a menu offering traditional Italian entrees along with local favorites including burgers, fries and chicken tenders.
“We will be open from 11 a.m. to 7 p.m., but our hours will be based on customer demand. If people are here we can stay later,” Alsawafi said.
A 1995 graduate of East Carter High School who also studied at Morehead State University, Alsawafi was pleased to announce she received a 97% score from the Grayson Health Department, and is certified by the state as a Food Protection Manager.
Tre Fratelli has a massive pizza oven in the back, but the restaurant will not have pizza on the menu during the first days of business. Alsawafi explained they hope to have the oven connected and in operation soon.
Staffing will also be determined by customer demand, Alsawafi said.
“Applications are encouraged. I’m looking for a few more good people,” she noted.
