"They take it serious," said cafeteria manager Brad Green of his kitchen crew as they began preparations Monday for a traditional Thanksgiving gathering from 5 to 7 p.m., Wednesday, November 20, 2019.
Green said the team will feed "probably only around 400 people," during Wednesday evening's meal. Monday's shift saw the start of measuring, counting, cutting, "panning and planning," he said.
It is a challenge, he said, although the team of 10 plus himself have a coordinated effort in mind to accomplish their goals.
"Obviously the thing is you've got to plan the other meals around the need for prep," he said.
Diners always rave about the KCU Cafeteria's turkey, which Green said is prepared according to techniques the staff have researched and kitchen tested.
"It's the way they cook it. Instead of one temperature the whole time, they will adjust the cooking temperatures at different times - so many minutes at this temperature and so many minutes at this temperature," Green explained.
With a full fare of side dishes prepared by the KCU culinary team, diners will be welcomed to the cafeteria at Kentucky Christian University in Grayson from 5 to 7 p.m. Wednesday, where the evening's all-you-can-eat meal, with drink and tax included, will cost $5.50.
Reservations are not required.
"We don't even have a way to take reservations here," Green said with a chuckle.
